Ingredients

  • 800 g chicken thighs or drumsticks
  • 6 pieces shallots
  • 4 pieces garlic cloves
  • 5 pieces red chilies (adjust for spice tolerance)
  • 3 pieces candlenuts (or substitute with macadamia nuts)
  • 5 cm ginger
  • 2 cm galangal
  • 2 pieces lemongrass stalks (white part only)
  • 5 cm turmeric
  • 4 pieces kaffir lime leaves
  • 400 ml coconut milk
  • 1 tbsp palm sugar (or brown sugar)
  • 1 tsp salt
  • 2 tbsp vegetable oil
  • 200 ml water

Directions

Step 1

Clean and pat dry the chicken pieces. Set aside.

Step 2

Prepare the spice paste by blending shallots, garlic, red chilies, candlenuts, ginger, galangal, turmeric, and lemongrass into a smooth paste.

Step 3

Heat vegetable oil in a large pan over medium heat. Add the spice paste and stir-fry for 3-4 minutes until fragrant.

Step 4

Add the chicken pieces to the pan and cook for 5 minutes, allowing the chicken to absorb the flavors of the spice paste.

Step 5

Pour in the coconut milk and water, and stir to combine. Add kaffir lime leaves, palm sugar, and salt.

Step 6

Reduce the heat to low, cover the pan, and let the chicken simmer for 30 minutes, stirring occasionally.

Step 7

Uncover the pan and simmer for an additional 5-10 minutes to thicken the sauce to your preferred consistency.

Step 8

Taste and adjust seasoning if necessary. Serve the Ayam Bali hot with steamed rice.
