Ingredients

  • 3 pounds beef chuck roast
  • 1 teaspoons salt
  • 1 teaspoons black pepper
  • 2 tablespoons olive oil
  • 1 large, sliced onion
  • 4 medium, peeled and cut into chunks carrots
  • 4 medium, peeled and halved potatoes
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 3 cloves, minced garlic
  • 1 teaspoons dried rosemary
  • 1 teaspoons dried thyme

Directions

Step 1

Season the beef chuck roast generously with salt and black pepper on all sides.

Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove the roast and set aside.

In the same skillet, add the sliced onion and cook for 3-4 minutes until softened and lightly golden.
