Ingredients

  • 6 pieces Chicken thighs, bone-in and skin-on
  • 2 tablespoons Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 medium Yellow onion, finely diced
  • 3 cloves Garlic, minced
  • 1.5 cups Chicken broth
  • 0.5 cups Heavy cream
  • 1 tablespoon All-purpose flour
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

In a small bowl, mix the paprika, garlic powder, salt, and black pepper. Rub the spice mixture all over the chicken thighs, ensuring they are evenly coated.

Step 2

Heat a large skillet over medium-high heat. Add the olive oil and butter, allowing the butter to melt and the mixture to get hot.

Step 3

Place the chicken thighs skin-side down in the skillet. Sear for 4-5 minutes on each side or until they are golden brown. Remove the chicken from the skillet and set aside on a plate. (They won't be fully cooked yet.)

Step 4

In the same skillet, add the diced onion. Sauté for 4-5 minutes, stirring occasionally, until the onion is softened and translucent.

Step 5

Add the minced garlic to the skillet and cook for 1 minute, stirring frequently, until fragrant.

Step 6

Sprinkle the flour over the onions and garlic, and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste.

Step 7

Gradually pour the chicken broth into the skillet, stirring constantly to prevent lumps. Bring the mixture to a simmer.

Step 8

Reduce the heat to medium-low and stir in the heavy cream. Mix well until the gravy is smooth and creamy.

Step 9

Return the seared chicken thighs to the skillet, placing them skin-side up. Spoon some of the gravy over the chicken.

Step 10

Cover the skillet with a lid and simmer for 20 minutes, or until the chicken is fully cooked (internal temperature reaches 165°F/75°C) and tender.

Step 11

Taste the gravy and adjust seasoning with additional salt and pepper, if needed.

Step 12

Garnish the chicken and gravy with chopped fresh parsley before serving.

Step 13

Serve hot with mashed potatoes, rice, or crusty bread to soak up the creamy gravy.
