Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 2 tbsp butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz cremini or white mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 8 oz egg noodles
  • 2 tbsp fresh parsley, chopped (optional)

Directions

Step 1

Cook the egg noodles according to the package instructions. Drain and set aside.

Step 2

In a large skillet over medium-high heat, melt 1 tablespoon of butter.

Step 3

Add the thinly sliced beef and sear for 2-3 minutes per side until browned. Remove the beef from the skillet and set it aside.

Step 4

In the same skillet, melt the remaining 1 tablespoon of butter. Add the chopped onion and sauté for 3-4 minutes until soft.

Step 5

Add the minced garlic and sliced mushrooms to the skillet. Cook for another 3-5 minutes until the mushrooms are tender.

Step 6

Sprinkle the flour over the vegetable mixture and stir well to coat. Cook for 1 minute to remove the raw flour taste.

Step 7

Gradually pour in the beef broth while stirring to avoid lumps. Bring the mixture to a gentle boil and cook for 2-3 minutes until it thickens slightly.

Step 8

Reduce the heat to low. Stir in the sour cream, Dijon mustard, paprika, salt, and black pepper until combined.

Step 9

Return the seared beef to the skillet and simmer for 5 minutes, allowing the flavors to meld together.

Step 10

Serve the beef stroganoff over the cooked egg noodles and garnish with chopped fresh parsley if desired.
