  • 1 russet potato, peeled and diced
  • 1 cup green beans, trimmed and chopped
  • 1 14-ounce can canned diced tomatoes
  • 4 cups beef broth
  • 1 cup water
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and fully cooked. Drain any excess grease and set the beef aside.

In the same pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, or until the vegetables start to soften.
