Ingredients

  • 300 grams Gluten-free all-purpose flour
  • 2 tablespoons Psyllium husk powder
  • 1 packet Instant yeast
  • 1 teaspoon Sugar
  • 350 milliliters Warm water
  • 3 tablespoons Extra virgin olive oil (for dough)
  • 1 teaspoon Salt (for dough)
  • 2 sprigs Fresh rosemary (optional, for topping)
  • 1 teaspoon Coarse sea salt (for topping)
  • 2 tablespoons Extra virgin olive oil (for topping)

Directions

Step 1

In a large mixing bowl, whisk together the gluten-free all-purpose flour, psyllium husk powder, instant yeast, sugar, and salt.

Step 2

Gradually pour the warm water into the dry ingredients while stirring with a wooden spoon or spatula. Mix until a sticky dough forms.

Step 3

Add the 3 tablespoons of olive oil to the dough and knead it gently with your hands or a stand mixer fitted with a paddle attachment for about 3-4 minutes.

Step 4

Cover the bowl with plastic wrap or a damp towel and let the dough rise in a warm place for 1 hour, or until it has doubled in size.

Step 5

Preheat your oven to 200°C (400°F) and line a 9x13-inch baking pan with parchment paper.

Step 6

Transfer the risen dough to the prepared pan. Using lightly oiled hands, spread the dough evenly to cover the bottom of the pan. Create small dimples all over the surface of the dough by pressing your fingertips gently into it.

Step 7

Brush the surface generously with the remaining 2 tablespoons of olive oil. Sprinkle fresh rosemary leaves and coarse sea salt evenly over the top.

Step 8

Bake in the preheated oven for 35-40 minutes, or until the focaccia is golden brown and the edges are slightly crisp.

Step 9

Let the focaccia cool in the pan for 5 minutes before transferring it to a wire rack to cool completely.

Step 10

Slice and serve warm or at room temperature. Store leftovers in an airtight container at room temperature for 2-3 days.
