Ingredients

  • 400 ml Coconut milk
  • 2 tablespoons Red curry paste
  • 1 tablespoon Fish sauce
  • 1 tablespoon Brown sugar
  • 3 Kaffir lime leaves
  • 1 Lemongrass stalk, finely chopped
  • 10 Thai basil leaves
  • 2 Garlic cloves, minced
  • 1 teaspoon Ginger, minced
  • 1 tablespoon Lime juice
  • 1 tablespoon Oil (vegetable or coconut)

Directions

Step 1

In a saucepan, heat 1 tablespoon of oil over medium heat.

Step 2

Add the minced garlic, minced ginger, and chopped lemongrass. Sauté for about 2 minutes until fragrant.

Step 3

Stir in the red curry paste and cook for another 1 minute, stirring constantly to prevent sticking.

Step 4

Gently pour in the coconut milk, stirring to combine it thoroughly with the curry paste.

Step 5

Add the fish sauce and brown sugar to the mixture, stirring until the sugar dissolves completely.

Step 6

Tear the kaffir lime leaves into halves and add them to the sauce. These leaves will offer a unique citrusy aroma.

Step 7

Reduce the heat to low and let the sauce simmer gently for about 10 minutes, stirring occasionally.

Step 8

Remove the sauce from the heat, then stir in the fresh lime juice.

Step 9

Add the Thai basil leaves to the sauce, allowing them to wilt with the residual heat.

Step 10

Taste the sauce and adjust seasoning if necessary, for example, additional fish sauce for saltiness or lime juice for tanginess.

Step 11

Remove the kaffir lime leaves before serving, and use the sauce immediately with your favorite protein or vegetables, or store it in an airtight container in the refrigerator for up to 3 days.
