Ingredients

  • 300 g All-purpose flour
  • 7 g Active dry yeast
  • 1 tsp Sugar
  • 1 tsp Salt
  • 150 ml Milk (lukewarm)
  • 3 tbsp Butter (melted)
  • 1 kg Yellow onions (thinly sliced)
  • 150 g Bacon (diced)
  • 2 tbsp Butter (for sautéing)
  • 3 Eggs
  • 200 g Sour cream
  • 100 ml Heavy cream
  • 1 tsp Caraway seeds (optional)
  • 0.25 tsp Nutmeg (freshly grated)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper (freshly ground)

Directions

Step 1

In a large mixing bowl, combine the flour, yeast, sugar, and salt. Gradually add the lukewarm milk and melted butter. Knead the dough until smooth and elastic, about 8-10 minutes.

Step 2

Cover the dough with a clean kitchen towel and let it rise in a warm place for about 1 hour, or until it doubles in size.

Step 3

While the dough rises, heat 2 tablespoons of butter in a large skillet over medium heat. Add the diced bacon and cook until it starts to crisp up.

Step 4

Add the sliced onions to the skillet with the bacon and sauté for about 15-20 minutes, or until the onions are soft and lightly caramelized. Remove from heat and let the mixture cool slightly.

Step 5

In a mixing bowl, whisk together the eggs, sour cream, heavy cream, nutmeg, caraway seeds (if using), salt, and pepper to create the custard base.

Step 6

Preheat the oven to 200°C (390°F). Lightly grease a 26cm (10-inch) pie dish or tart pan.

Step 7

Roll out the risen dough on a floured surface to fit the size of your pie dish. Transfer the dough to the dish, pressing it into the edges and trimming any excess.

Step 8

Spread the onion and bacon mixture evenly over the dough. Pour the egg and cream mixture on top, spreading it evenly.

Step 9

Bake the onion pie in the preheated oven for 45-50 minutes, or until the filling is set and the crust is golden brown.

Step 10

Let the pie cool slightly before slicing. Serve warm or at room temperature. Optional: garnish with fresh herbs like parsley or chives.
