Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons vegetable oil
  • 1 large white onion
  • 6 large garlic cloves
  • 3 pieces chipotle peppers in adobo sauce

  • 2 teaspoons dried oregano
  • 0.25 teaspoon ground cloves
  • 3 leaves bay leaves
  • 1.5 tablespoons apple cider vinegar
  • 2 cups beef broth
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 12 pieces corn tortillas
  • 0.5 cup fresh cilantro
  • 1 large lime

Directions

Step 1

Trim excess fat from the beef chuck roast and cut it into large chunks, about 3-4 inches wide.

Step 2

In a large pan over medium heat, add vegetable oil. Sear the beef chunks until browned on all sides, about 3-4 minutes per side. Transfer seared beef to a slow cooker.

Peel and finely chop the white onion and crush the garlic cloves. Add them to the slow cooker with the beef.
