Ingredients

  • 1 cup Rolled Oats
  • 0.5 cup Dried Apricots
  • 0.5 cup Shredded Coconut

  • 0.25 cup Coconut Oil
  • 2 tablespoons Chia Seeds
  • 0.5 teaspoon Baking Powder
  • 1 teaspoon Vanilla Extract
  • 0.25 teaspoon Salt
  • 0.25 cup Dried Cranberries
  • 0.25 cup Raisins

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a mini muffin pan.

Place the dried apricots in a food processor and process until they are finely chopped.

Add rolled oats, shredded coconut, sunflower seeds, and ground flaxseed to the food processor and pulse a few times to mix everything together.
