Ingredients

  • 2 medium aubergines (eggplants)
  • 3 tablespoons tahini (sesame seed paste)
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon ground cumin
  • 2 tablespoons fresh parsley
  • 0.5 teaspoon paprika
  • 2 tablespoons pomegranate seeds

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Pierce the aubergines a few times with a fork and place them on a baking tray. Roast in the oven for 30-40 minutes, or until the skins are wrinkled and the aubergines feel tender when pressed.

Step 3

Remove the aubergines from the oven and allow them to cool slightly. Once they are cool enough to handle, peel off the skins and discard them.

Step 4

Place the aubergine flesh in a large mixing bowl and mash it with a fork or potato masher until smooth.

Step 5

Mince the garlic cloves and add them to the mashed aubergine along with the tahini, lemon juice, olive oil, salt, and cumin. Mix well until all ingredients are fully incorporated.

Step 6

Taste the mutabal and adjust the seasoning if necessary, adding more salt or lemon juice to taste.

Step 7

Transfer the mutabal to a serving bowl and use the back of a spoon to create a swirl pattern on the surface.

Step 8

Garnish the mutabal with fresh parsley, paprika, and pomegranate seeds.

Step 9

Serve the aubergine mutabal with warm flatbreads or fresh vegetable sticks.
