Ingredients

  • 3 cups Cooked white rice
  • 2 tablespoons Vegetable oil
  • 0.5 cup Onion
  • 3 Garlic cloves
  • 1 Carrot
  • 0.5 cup Frozen peas
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 2 Eggs
  • 2 Green onions
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup Cooked chicken or shrimp

Directions

Step 1

Using leftover or cold rice works best for this recipe as it prevents the rice from becoming mushy.

Step 2

Chop the onion and carrot into small, even pieces. Mince the garlic cloves. Slice the green onions thinly and set aside for garnish.

Step 3

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

Step 4

Add the chopped onion and garlic to the skillet. Sauté until the onion becomes translucent, about 2-3 minutes.

Step 5

Add the diced carrot and cook for another 2 minutes until slightly tender.

Step 6

Add the frozen peas to the skillet and stir for another minute as they start to thaw.

Step 7

Push the vegetables to one side of the pan and pour the remaining 1 tablespoon of vegetable oil into the empty side of the pan.

Step 8

Crack the eggs into the oil and scramble them gently, mixing them slowly into the vegetables once cooked.

Step 9

Add the cooked rice to the skillet and break it apart with a spatula or spoon.

Step 10

Pour the soy sauce and sesame oil over the rice mixture, stirring continuously to ensure even coating.

Step 11

Add the cooked chicken or shrimp, mixing thoroughly until all ingredients are well combined and heated through.

Step 12

Season with salt and black pepper to taste.

Step 13

Garnish with sliced green onions before serving.
