Ingredients

  • 2 cups Long-grain white rice
  • 1 15-ounce can Canned gandules (pigeon peas)
  • 2 tablespoons Olive oil
  • 1 cup Sofrito
  • 4 ounces Tomato sauce
  • 1 teaspoon Adobo seasoning
  • 1 packet Sazón with coriander and annatto
  • 3.5 cups Chicken broth
  • 0.5 cup Green olives with pimientos
  • 1 tablespoon Capers
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch. Drain well and set aside.

Step 2

Heat the olive oil in a large pot over medium heat. Add the sofrito and sauté for 3 minutes until fragrant.

Step 3

Stir in the tomato sauce, adobo seasoning, and sazón packet. Cook for an additional 2 minutes, allowing the flavors to meld.

Step 4

Pour in the chicken broth, and add the drained gandules, green olives, capers, bay leaf, and salt. Bring the mixture to a boil.

Step 5

Add the rice to the pot, stirring well to combine all the ingredients evenly.

Step 6

Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for 25-30 minutes, or until the rice is tender and the liquid is absorbed.

Step 7

Once cooked, remove the bay leaf and stir in chopped cilantro for a fresh burst of flavor.

Step 8

Fluff the rice gently with a fork before serving and enjoy your Arroz con Gandules with your favorite protein or side dishes.
