Ingredients

  • 1.5 pounds chicken, preferably bone-in
  • 30 grams ginger, sliced and pounded
  • 1 medium onion, chopped
  • 5 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 1 cup long-grain white rice
  • 6 cups chicken broth
  • 1 pinch saffron threads
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 cup green onions, chopped
  • 0.25 cup fried garlic
  • 0 as needed calamansi or lemon wedges, for serving

Directions

Step 1

Heat a large pot over medium heat and add a tablespoon of oil. Sauté the chopped onion and pounded ginger until the onion turns translucent.

Step 2

Add the minced garlic and cook until golden brown and fragrant.

Step 3

Add the chicken pieces into the pot and brown them on all sides. This should take about 5 to 7 minutes.

Step 4

Pour in the fish sauce and let it simmer for a minute to infuse the chicken with its flavor.

Step 5

Add the rice, stirring frequently to mix it well with the chicken and spices.

Step 6

Pour in the chicken broth and add the saffron threads. Stir everything well and bring to a boil.

Step 7

Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 30 to 40 minutes, or until the rice is very tender and the mixture reaches a porridge-like consistency.

Step 8

Stir the porridge occasionally to prevent the rice from sticking to the bottom of the pot.

Step 9

Season with salt and ground black pepper to taste.

Step 10

Garnish with chopped green onions and fried garlic before serving.

Step 11

Serve hot with calamansi or lemon wedges on the side for added flavor.
