Preheat your oven to 180°C (350°F).
In a small bowl, soak the bread crumbs in milk and set aside to allow the milk to fully absorb.
Hard-boil 3 of the eggs by placing them in a saucepan, covering them with water, bringing them to a boil, and simmering for 9 minutes. Cool the boiled eggs under cold water, peel, and set aside.
Chop the onion, bell pepper, garlic, and parsley finely, and slice the olives thinly.
In a frying pan over medium heat, add the olive oil and sauté the chopped onion until translucent, about 4-5 minutes. Add the garlic and bell pepper, cooking until the peppers soften, about 3 more minutes.
In a large mixing bowl, combine the ground beef, soaked bread crumbs, the remaining 2 raw eggs, sautéed vegetables, chopped parsley, oregano, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
Grease a loaf pan with a bit of olive oil or line it with parchment paper.
Press half of the meat mixture into the bottom of the loaf pan, creating a slight well down the center.
Peel and halve the hard-boiled eggs, and place them lengthwise in the center of the meat mixture along with half of the sliced olives.
Cover with the remaining meat mixture, pressing it down and sealing the edges to encase the eggs and olives.
Optional: Arrange the remaining sliced olives decoratively on top of the meat mixture.
Place the loaf pan in the preheated oven and bake for approximately 60 minutes, or until fully cooked through and the top is nicely browned.
Let the meatloaf rest for about 10 minutes before slicing and serving.
