Ingredients

  • 200 grams Glutinous rice
  • 200 milliliters Coconut milk
  • 200 milliliters Water
  • 1 teaspoon Salt
  • 10 pieces Banana leaves
  • 2 tablespoons Cooking oil
  • 200 grams Chicken breast
  • 5 pieces Shallots
  • 3 pieces Garlic cloves
  • 2 pieces Red chili
  • 1 tablespoon Coconut sugar
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Cumin
  • 1 medium Carrot
  • 100 grams Green beans
  • 0.5 teaspoon Black pepper

Directions

Step 1

Rinse the glutinous rice under cold water until it runs clear.

Step 2

In a pot, combine coconut milk, water, and salt. Bring to a simmer and add the glutinous rice. Stir well.

Step 3

Cook on low heat, stirring occasionally, until the liquid is absorbed and the rice is half-cooked. Set aside to cool.

Step 4

Heat cooking oil in a pan over medium heat. Add finely chopped shallots, garlic, and red chili. Sauté until fragrant.

Step 5

Add chicken breast cut into small cubes, coconut sugar, coriander powder, cumin, and black pepper. Cook until the chicken is cooked through.

Step 6

Add finely chopped carrot and diced green beans, cooking for another 5 minutes or until the vegetables are tender.

Step 7

Cut the banana leaves into pieces approximately 20x20 cm and soften them by passing over an open flame quickly.

Step 8

Place a spoonful of rice onto each banana leaf, flatten it with the back of a spoon, and add a spoonful of the filling in the center.

Step 9

Roll up the banana leaf tightly into a cylinder and fold the ends securely. Use toothpicks to seal if necessary.

Step 10

Steam the wrapped arem arem in a steamer for about 30 minutes until fully cooked.

Step 11

Remove from the steamer and let cool slightly before serving. Enjoy your arem arem warm or at room temperature.
