Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 cup Chicken broth
  • 0.5 cup Apricot preserves
  • 2 tablespoons Dijon mustard
  • 1 teaspoon Fresh thyme leaves
  • 1 cup Couscous
  • 1.25 cups Water
  • 1 tablespoon Butter

Directions

Step 1

Season both sides of the chicken breasts with the salt and ground black pepper.

In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and sear for 4-5 minutes per side until golden brown. Remove the chicken from the pan and set aside.
