Ingredients

  • 1.5 cups All-purpose flour
  • 1 cup Old-fashioned rolled oats
  • 0.5 cup Dried apples, chopped
  • 0.75 cup Brown sugar
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Salt
  • 2 whole Large eggs
  • 0.25 cup Unsalted butter, melted
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the all-purpose flour, rolled oats, baking powder, cinnamon, and salt. Stir to evenly distribute the dry ingredients.

Step 3

In a separate bowl, whisk together the brown sugar, eggs, melted butter, and vanilla extract until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and mix until a dough begins to form. Add the chopped dried apples and mix to evenly incorporate.

Step 5

Lightly dust your work surface with flour and transfer the dough onto it. Gently knead the dough to ensure it holds together, and form it into a log roughly 12 inches long and 3 inches wide.

Step 6

Place the log onto the prepared baking sheet and bake for 25 minutes. The dough should be firm and lightly golden.

Step 7

Remove the log from the oven and let it cool on the baking sheet for about 10 minutes. Reduce the oven temperature to 325°F (165°C).

Step 8

Using a sharp serrated knife, slice the log diagonally into 1/2-inch thick slices. Place the slices cut side down on the baking sheet.

Step 9

Bake the slices for an additional 10 minutes, then flip them over and bake for another 10 minutes until both sides are golden and crisp.

Step 10

Remove the biscotti from the oven and let them cool completely on a wire rack. Store in an airtight container for up to two weeks.
