Ingredients

  • 6 tablespoons butter
  • 1 medium, diced yellow onion
  • 3 stalks, diced celery
  • 3 cloves, minced garlic
  • 2 medium, peeled, cored, and diced Granny Smith apple
  • 1 cup, roughly chopped walnuts
  • 2 tablespoons, chopped fresh sage
  • 1 tablespoon, chopped fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 8 cups, cubed day-old bread
  • 2 cups chicken or vegetable stock
  • 2 large eggs

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

Step 2

In a large skillet, melt the butter over medium heat. Add the diced onion and celery, and sauté for 5-7 minutes until softened.

Step 3

Stir in the minced garlic, diced apples, and chopped walnuts. Cook for another 3-4 minutes until the apples begin to soften and the walnuts are toasted.

Step 4

Add the chopped sage, thyme, salt, and black pepper to the skillet. Stir well to evenly coat the mixture with the herbs and seasoning.

Step 5

In a large mixing bowl, combine the cubed bread with the cooked mixture from the skillet.

Step 6

In a separate bowl, whisk together the stock and eggs. Pour this mixture over the bread and vegetable mixture, gently tossing to coat until the bread is evenly moistened.

Step 7

Transfer the stuffing mixture to the prepared baking dish, spreading it out evenly.

Step 8

Cover the baking dish with aluminum foil and bake for 30 minutes. Then, uncover and bake for an additional 20 minutes, or until the top is golden brown and slightly crispy.

Step 9

Remove from the oven and let the stuffing cool for a few minutes before serving.
