Ingredients

  • 2 sheets Puff pastry sheets
  • 3 whole Apples (Granny Smith or Honeycrisp)
  • 4 tablespoons Granulated sugar
  • 1 teaspoon Ground cinnamon
  • 2 tablespoons Butter
  • 4 large Egg yolks
  • 1.5 cups Whole milk
  • 1 tablespoon Orange zest
  • 1 tablespoon Fresh orange juice
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground nutmeg
  • 1 tablespoon Powdered sugar (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.

Step 2

Roll out the puff pastry sheets and cut them into six 4-inch circles. Place the circles on the baking tray and prick the centers lightly with a fork to prevent over-puffing.

Step 3

Peel, core, and thinly slice the apples. Arrange the apple slices in a spiral pattern on top of the puff pastry circles, leaving a small border around the edges.

Step 4

In a small bowl, mix 2 tablespoons of granulated sugar with the ground cinnamon. Sprinkle evenly over the apple-topped tartlets.

Step 5

Dot the apples with small pieces of butter using 1 tablespoon spread across all tartlets.

Step 6

Bake the tartlets in the preheated oven for 20-25 minutes or until the pastry is golden and the apples are tender. Remove and cool slightly.

Step 7

While the tartlets bake, prepare the nutmeg-scented orange custard. In a medium bowl, whisk the egg yolks and 2 tablespoons of granulated sugar until pale and creamy.

Step 8

In a saucepan, gently heat the milk, orange zest, orange juice, vanilla extract, and ground nutmeg until just simmering. Do not let it boil.

Step 9

Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to temper the yolks.

Step 10

Return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until the custard thickens and coats the back of a spoon, about 5-7 minutes. Remove from heat and let cool slightly.

Step 11

Serve each apple tartlet drizzled with warm nutmeg-scented orange custard and a dusting of powdered sugar on top.
