Ingredients

  • 0.5 cup Small tapioca pearls
  • 2 cups Water
  • 1.5 cups Milk
  • 0.25 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 2 medium Apples (peeled, cored, and diced)
  • 1 tablespoon Butter
  • 0.5 teaspoon Cinnamon
  • 1 tablespoon Brown sugar
  • 0.25 teaspoon Salt

Directions

Step 1

Rinse the tapioca pearls under cold water and set aside.

Step 2

In a medium saucepan, bring the water to a gentle boil. Add the tapioca pearls and cook over medium heat, stirring frequently, until the pearls turn translucent (about 10 minutes). Drain and set aside.

Step 3

In the same saucepan, heat the milk over medium heat until steaming but not boiling. Add the cooked tapioca pearls, granulated sugar, and a pinch of salt. Stir to combine.

Step 4

Lower the heat to medium-low, and let the mixture simmer for 10-12 minutes, stirring occasionally, until it thickens. Remove from heat and stir in the vanilla extract. Set aside.

Step 5

In a skillet, melt the butter over medium heat. Add the diced apples, brown sugar, and cinnamon. Cook, stirring occasionally, until the apples are tender and caramelized, about 8-10 minutes.

Step 6

To serve, layer warm tapioca pudding and caramelized apples in individual serving bowls or glasses. Alternatively, you can stir the apples directly into the tapioca mixture for a homogenous dessert.

Step 7

Serve warm or chilled, garnished with a sprinkle of cinnamon or a dollop of whipped cream if desired.
