Ingredients

  • 4 pieces pork chops
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium (sliced) onion
  • 2 (peeled, cored, and sliced) apples (e.g., Granny Smith or Honeycrisp)
  • 1 cup apple cider
  • 3 sprigs fresh thyme
  • 1 teaspoon all-purpose flour (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Directions

Step 1

Season both sides of the pork chops with salt, black pepper, ground cinnamon, and ground nutmeg.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once heated, add the pork chops and sear for 3–4 minutes on each side until golden brown. Remove the pork chops and set aside on a plate.

Step 3

In the same skillet, reduce the heat to medium and add the unsalted butter. Once melted, add the sliced onion and sauté for 4–5 minutes until softened and lightly caramelized.

Step 4

Add the sliced apples to the skillet and cook for another 3 minutes, stirring gently, until they begin to soften.

Step 5

Deglaze the pan by pouring in the apple cider, scraping up any browned bits from the bottom of the skillet with a wooden spoon. Add the fresh thyme sprigs.

Step 6

Return the pork chops to the skillet. Spoon some of the apple-onion mixture over the chops. Reduce the heat to low, cover, and simmer for 15–20 minutes, or until the pork chops are cooked through and reach an internal temperature of 145°F (63°C).

Step 7

If you'd like to thicken the sauce: In a small bowl, mix the all-purpose flour with the water to create a slurry. Stir the slurry into the skillet and cook for an additional 2–3 minutes until the sauce thickens.

Step 8

Remove the thyme sprigs before serving. Serve the pork chops topped with the apple and onion mixture, alongside your favorite side dishes like mashed potatoes or steamed vegetables.
