Ingredients

  • 4 tablespoons unsalted butter
  • 2 large apples
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 0.75 cup all-purpose flour
  • 0.75 cup whole milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 2 tablespoons powdered sugar (optional, for topping)
  • 2 tablespoons maple syrup (optional, for serving)

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Peel, core, and thinly slice the apples.

Step 3

Place a 10-inch oven-safe skillet (preferably cast iron) over medium heat and melt 4 tablespoons of unsalted butter.

Step 4

Add the sliced apples to the skillet and sprinkle with granulated sugar and ground cinnamon. Sauté for 4-5 minutes until the apples are tender and slightly caramelized. Remove from heat.

Step 5

In a blender, combine the all-purpose flour, whole milk, eggs, vanilla extract, and salt. Blend for 15-20 seconds until the batter is smooth and well-mixed.

Step 6

Pour the batter evenly over the apples in the skillet.

Step 7

Immediately transfer the skillet to the preheated oven and bake for 18-20 minutes or until the pancake is puffed and golden brown.

Step 8

Carefully remove the skillet from the oven (it will be very hot). Let the pancake cool slightly, as it will deflate a bit.

Step 9

Dust with powdered sugar and serve warm with maple syrup if desired.
