Directions

Step 1

Wash, core, and roughly chop the apples, leaving the skin on for added natural pectin.

In a large pot, combine the chopped apples and water. Bring to a boil over medium-high heat, then reduce the heat and simmer for 30 minutes, or until the apples are soft and breaking down.

Strain the apple mixture through a fine-mesh sieve or cheesecloth into a large bowl, pressing gently to extract the juice. Discard the solids. Measure out 3 cups of apple juice for the jelly, adding water if necessary to reach that amount.

In a large, heavy-bottomed pot, combine the apple juice, diced bell peppers, jalapeño peppers, apple cider vinegar, and salt. Bring to a boil over medium-high heat.
