Ingredients

  • 2 pieces (1 lb each) Pork tenderloin
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 tablespoon Unsalted butter
  • 1 cup Apple cider
  • 1/3 cup Pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon Ground cinnamon
  • 1/8 teaspoon Ground cloves
  • 1 Granny Smith apple, peeled and diced
  • 1 teaspoon Fresh thyme leaves (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Trim any silver skin from the pork tenderloins and pat them dry with paper towels. Season them all over with salt and black pepper.

Step 3

In a large, oven-safe skillet, heat olive oil over medium-high heat. Sear the pork tenderloins for 2-3 minutes per side until golden brown. Remove the pork from the skillet and set it aside.

Step 4

Reduce the heat to medium and add unsalted butter to the skillet. Once melted, add the diced Granny Smith apple and sauté for 2-3 minutes until slightly softened.

Step 5

Pour in the apple cider, maple syrup, Dijon mustard, ground cinnamon, and ground cloves. Stir well to combine and let the glaze simmer for 2-3 minutes until it starts to thicken slightly.

Step 6

Return the pork tenderloins to the skillet, spoon some of the glaze over the top, and transfer the skillet to the preheated oven.

Step 7

Roast the pork for 15-18 minutes, or until the internal temperature reaches 145°F (63°C) when measured with a meat thermometer.

Step 8

Once cooked, remove the skillet from the oven and transfer the pork to a cutting board. Tent it with foil and let it rest for 5-10 minutes.

Step 9

While the pork rests, place the skillet back on the stovetop over medium heat to further reduce the glaze, if needed, until it reaches your desired consistency.

Step 10

Slice the pork tenderloins into medallions and drizzle the apple maple glaze over the top. Garnish with fresh thyme leaves, if desired, and serve warm with your favorite sides.
