Ingredients

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon ground allspice
  • 0.75 cup unsalted butter (softened)
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups apples (peeled, cored, and finely chopped)
  • 8 ounces cream cheese (softened)
  • 0.5 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract (for cream cheese filling)
  • 1 cup chopped pecans or walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a Bundt pan or spray it with a nonstick baking spray.

Step 2

In a large bowl, combine the flour, granulated sugar, brown sugar, baking soda, salt, ground cinnamon, nutmeg, and allspice.

Step 3

Add the softened butter, eggs, and vanilla extract to the dry ingredients. Mix until just combined.

Step 4

Gently fold in the chopped apples and optional chopped pecans or walnuts, if using. Set aside.

Step 5

In a medium bowl, beat the softened cream cheese with powdered sugar, 1 egg, and 1 teaspoon of vanilla extract until smooth to create the cream cheese filling.

Step 6

Pour half of the apple cake batter into the prepared Bundt pan, spreading it evenly.

Step 7

Spoon the cream cheese filling over the batter, making sure not to let it touch the edges of the pan.

Step 8

Spread the remaining cake batter carefully over the cream cheese layer, smoothing it out to cover the filling completely.

Step 9

Bake in the preheated oven for 55 to 60 minutes, or until a toothpick inserted into the center of the cake (avoiding the cream cheese layer) comes out clean.

Step 10

Remove the cake from the oven and let it cool in the pan for 15 minutes. Then invert the pan onto a wire rack to cool completely before serving.

Step 11

Dust with powdered sugar or drizzle with a glaze if desired before serving. Enjoy!
