Ingredients

  • 3 medium (peeled, cored, and diced) Apples
  • 0.33 cups Granulated sugar
  • 1 teaspoons Ground cinnamon
  • 2 tablespoons Butter
  • 4 pieces Flour tortillas (8-inch)
  • 0.5 cups Brown sugar
  • 0.33 cups (melted) Butter (for topping sauce)
  • 0.25 cups Water
  • 0.5 teaspoons Ground cinnamon (for topping)
  • 0 as desired Vanilla ice cream or caramel sauce (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish lightly with butter or cooking spray.

Step 2

In a medium-sized skillet over medium heat, melt 2 tablespoons of butter. Add the diced apples, granulated sugar, and 1 teaspoon of ground cinnamon. Cook, stirring occasionally, until the apples are softened, about 5-7 minutes. Remove from heat and set aside to cool slightly.

Step 3

Lay a flour tortilla on a flat surface. Spoon a quarter of the cooked apple mixture onto the center of the tortilla. Fold in the sides of the tortilla and then roll it up tightly, burrito-style. Place the rolled enchilada seam-side down in the prepared baking dish. Repeat with the remaining tortillas and apple mixture.

Step 4

In a small bowl, mix the brown sugar, 0.33 cups of melted butter, and water until well combined. Pour this mixture evenly over the top of the enchiladas in the baking dish. Sprinkle 0.5 teaspoons of ground cinnamon over the top for extra flavor.

Step 5

Cover the dish with foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for another 5-7 minutes, or until the tops of the tortillas are golden and slightly crisp.

Step 6

Remove the enchiladas from the oven and let them cool for a few minutes before serving.

Step 7

For an extra decadent treat, serve warm with a scoop of vanilla ice cream or drizzle with caramel sauce.
