Ingredients

  • 3 large Eggs
  • 2 tablespoons Milk
  • 1 tablespoon Unsalted butter
  • 1 small Apple (sweet variety, e.g., Honeycrisp or Gala)
  • 2 ounces Brie cheese
  • 1 teaspoon Honey
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 1 tablespoon Fresh chives (optional)

Directions

Step 1

Core and thinly slice the apple into bite-sized pieces.

Step 2

Cut the brie cheese into small slices or chunks and set aside.

Step 3

Crack the eggs into a small bowl, add the milk, and whisk until well combined. Stir in a pinch of salt and black pepper to taste.

Step 4

In a non-stick skillet, heat 1/2 tablespoon of the unsalted butter over medium heat. Add the sliced apple to the skillet and sauté for 2-3 minutes until softened. Drizzle the honey over the apples and stir to coat. Remove the apples from the skillet and set aside.

Step 5

Wipe the skillet clean with a paper towel, return it to the stove, and melt the remaining 1/2 tablespoon of butter over medium-low heat.

Step 6

Pour the whisked eggs into the skillet, tilting the pan to ensure the eggs cover the surface evenly. Allow the eggs to cook undisturbed for 1-2 minutes until the edges start to set.

Step 7

Once the eggs are mostly set but still slightly runny on top, arrange the sautéed apples and brie cheese on one half of the omelet.

Step 8

Using a spatula, gently fold the other half of the omelet over the filling. Press down lightly to seal.

Step 9

Continue to cook for another 1-2 minutes until the cheese is melted and the omelet is cooked through. Be careful not to overcook the eggs.

Step 10

Transfer the omelet to a plate and garnish with fresh chives if desired. Serve immediately and enjoy!
