Ingredients

  • 1 cup raw rice
  • 0.5 cup urad dal (split black gram)
  • 0.25 cup poha (flattened rice)
  • 0.5 teaspoon fenugreek seeds
  • 1 teaspoon salt
  • 2 tablespoons oil
  • 1.5 cups water

Directions

Step 1

Rinse the raw rice and urad dal separately under running water until the water runs clear. Soak the rice and urad dal in separate bowls with enough water to cover them, for at least 4-6 hours or overnight.

Soak the poha in a small amount of water for about 15-20 minutes before grinding the batter.

Step 3

Drain the soaked rice, urad dal, and poha. Transfer them to a blender along with the fenugreek seeds. Add water gradually and grind to a smooth, thick batter. The batter should be neither too thick nor too runny.

Add salt to the batter and mix well. Transfer the batter to a large bowl, cover it, and allow it to ferment in a warm place for 8-12 hours or until it doubles in size and turns slightly bubbly.

Once the batter is fermented, gently stir to mix. Heat the appe pan and add a few drops of oil into each cavity.

Pour a small ladle of batter into each cavity, filling it up to 3/4th. Cover with a lid and cook on medium heat for about 3-4 minutes, until the base is golden brown and the tops are steamed.

Carefully flip each appe using a fork or spoon and cook for another 3-4 minutes until the other side is golden brown.

Adjust the heat as necessary to ensure the appe are cooked through and golden, not burnt. Repeat with the remaining batter.
