Ingredients

  • 90 grams rolled oats
  • 150 grams plain flour
  • 100 grams granulated sugar
  • 75 grams shredded coconut
  • 125 grams unsalted butter
  • 2 tablespoons golden syrup
  • 1 teaspoon baking soda
  • 2 tablespoons boiling water

Directions

Step 1

Preheat your oven to 160°C (320°F) and line two baking trays with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, plain flour, granulated sugar, and shredded coconut.

Step 3

In a small saucepan over low heat, melt the unsalted butter with golden syrup, stirring occasionally until the mixture is smooth.

In a small bowl, dissolve the baking soda in boiling water, then add this solution to the butter and syrup mixture. It should froth up immediately.

Pour the frothy butter mixture into the dry ingredients and stir with a wooden spoon until thoroughly combined.
