Ingredients

  • 500 grams White fish (cut into pieces)
  • 2 large Onions
  • 2 medium Tomatoes
  • 50 grams Tamarind
  • 4 pieces Green chilies
  • 2 tablespoons Ginger-garlic paste
  • 10 leaves Curry leaves
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Fenugreek seeds
  • 1 teaspoon Red chili powder
  • 1 teaspoon Turmeric powder
  • 1.5 teaspoons Salt
  • 3 tablespoons Oil
  • 2 cups Water
  • 2 tablespoons Cilantro leaves

Directions

Step 1

Firstly, soak the tamarind in 1 cup of hot water for about 10 minutes. Mash and strain it to extract the juice. Set it aside.

Step 2

Slice the onions and tomatoes. Slit the green chilies.

Step 3

Heat oil in a large pan over medium heat. Add mustard seeds and fenugreek seeds. Let them splutter for a few seconds.

Add the sliced onions and sauté them until they turn translucent.

Stir in the ginger-garlic paste and cook for another minute until the raw smell disappears.

Add the tomatoes and green chilies. Cook until the tomatoes become soft and mushy.

Add turmeric powder, red chili powder, and salt. Mix well and cook for another 2 minutes.

Pour in the tamarind juice and 1 additional cup of water. Bring it to a boil, then reduce the heat to a simmer.
