Experience the authentic flavors of Punjab with this Amritsari Kulcha recipe, a mouthwatering Indian flatbread stuffed with spiced mashed potatoes and baked to golden perfection. Made with a pillowy dough of all-purpose flour, yogurt, ghee, and a touch of instant yeast, this kulcha is stuffed with a flavorful filling of boiled potatoes, onions, green chilies, and aromatic spices like cumin, coriander, chaat masala, and red chili powder. Each kulcha is rolled out, cooked on a tawa or baked until beautifully puffed and speckled with golden spots, then brushed with melted butter for a rich, indulgent finish. Serve these crispy-yet-soft kulchas hot with a side of tangy pickles, creamy yogurt, or your favorite curry for a comforting and satisfying meal that’s truly restaurant-worthy. Perfect for brunches, dinners, or festive occasions, this recipe brings the essence of Amritsar right to your kitchen.
In a bowl, combine the all-purpose flour, instant yeast, sugar, and salt.
Add ghee and yogurt to the flour mixture. Mix well.
Gradually add warm water and knead the mixture into a soft dough. Cover with a damp cloth and let it rest for 1 hour, until it doubles in size.
To make the filling, mash the boiled potatoes in a bowl and add chopped onion, green chilies, coriander leaves, cumin powder, coriander powder, chaat masala, and red chili powder. Mix thoroughly.
Divide the dough into equal-sized balls. Flatten each ball slightly and fill it with the potato mixture. Seal the edges and gently roll it into a round shape, about 6 inches in diameter.
Preheat a tandoor or oven, or place a tawa (griddle) on medium heat.
Place the rolled kulcha on the preheated tawa or in the oven. Cook until brown spots appear on one side, flip, and cook the other side.
Brush the cooked kulchas with butter for added flavor and serve hot.
Repeat the process for the remaining dough.
