Ingredients

  • 500 grams Potatoes
  • 2 tablespoons Oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 medium Onion
  • 1 medium Tomato
  • 1 small Green chili
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Garam masala
  • 200 milliliters Water
  • 2 tablespoons Cilantro leaves

Directions

Step 1

Peel and cube the potatoes into bite-size pieces.

Step 2

Heat oil in a pan over medium heat. Once the oil is hot, add mustard seeds and cumin seeds. Let them splutter.

Step 3

Finely chop the onion and add it to the pan. Sauté until it turns golden brown.

Step 4

Chop the tomato and green chili, then add them to the pan. Cook until the tomatoes are soft.

Step 5

Add turmeric powder, red chili powder, and coriander powder. Mix well.

Add the cubed potatoes to the pan and stir to coat them with the spices.

Add salt and mix again to combine all ingredients uniformly.

Pour in 200 milliliters of water and stir. Cover the pan with a lid and simmer over low heat until the potatoes are cooked through, approximately 15 minutes. Stir occasionally to prevent sticking.

Once the potatoes are tender, uncover and add garam masala. Stir well and allow it to cook for another 2-3 minutes to enhance the flavors.

Finely chop cilantro leaves and garnish the aloo sabji before serving.
