Ingredients

  • 1 cup Almonds
  • 1 cup Milk
  • 0.75 cup Sugar
  • 0.5 cup Ghee
  • 0.25 teaspoon Cardamom powder
  • 0.25 teaspoon Saffron strands
  • 0.25 cup Water
  • 2 tablespoons Pistachios or almonds (for garnish)

Directions

Step 1

Start by blanching the almonds: Soak 1 cup of almonds in hot water for 10 minutes and then peel off the skin.

Step 2

Once peeled, grind the almonds in a blender with 1 cup of milk to form a smooth paste.

Step 3

Heat 1/2 cup of ghee in a heavy-bottomed pan over medium heat.

Step 4

Add the almond paste to the pan and cook it for about 10-12 minutes, stirring continuously to avoid sticking.

Step 5

In a separate saucepan, dissolve 3/4 cup of sugar in 1/4 cup of water over medium heat to create a syrup. Stir until the sugar is completely dissolved.

Step 6

Add the sugar syrup to the cooking almond mixture, stirring continuously to combine.

Step 7

Continue cooking the mixture over medium heat, stirring often until it thickens and begins to release ghee from the sides, for approximately another 10 minutes.

Step 8

Add 1/4 teaspoon of cardamom powder to the mixture and stir well.

Step 9

Soak 1/4 teaspoon of saffron strands in a tablespoon of warm milk and add it to the halwa. Mix well.

Step 10

Cook for an additional 2-3 minutes until the halwa reaches your desired consistency.

Step 11

Garnish the almond halwa with 2 tablespoons of chopped pistachios or almonds.

Step 12

Serve warm and enjoy your homemade almond halwa.
