Ingredients

  • 100 grams Raw almonds
  • 3 tablespoons Sesame seeds
  • 2 tablespoons Coriander seeds
  • 1 tablespoon Cumin seeds
  • 1 teaspoon Fennel seeds
  • 1 teaspoon Black peppercorns
  • 1 teaspoon Salt
  • 0.5 teaspoon Paprika (optional)

Directions

Step 1

Heat a dry skillet over medium heat for 1-2 minutes until hot.

Step 2

Add the raw almonds to the skillet. Toast them gently, stirring frequently, for about 3-5 minutes or until they are golden and fragrant. Be careful not to burn them. Remove the almonds from the skillet and let them cool.

Step 3

In the same skillet, reduce the heat slightly and add the sesame seeds, coriander seeds, cumin seeds, fennel seeds, and black peppercorns. Toast for 1-2 minutes, stirring constantly, until they are aromatic and lightly browned.

Step 4

Transfer the toasted nuts and seeds to a plate to cool completely.

Step 5

Once cooled, place the almonds in a food processor or mortar and pestle. Pulse or crush them until they are coarsely chopped, being careful not to over-process them into a paste.

Step 6

Add the toasted seeds, pepper, and salt to the food processor or mortar. If using paprika, include it now. Pulse or grind gently until the mixture is evenly combined and has a coarse, crumbly texture.

Step 7

Taste the dukkah and adjust the seasoning with additional salt or spices if needed.

Step 8

Store the almond dukkah in an airtight container at room temperature for up to 2 weeks. Sprinkle it over roasted vegetables, meats, or salads, or serve it with olive oil and bread as a dip.
