Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon water
  • 1 cup almond meal
  • 1 cup vegetable oil

Directions

Step 1

Peel the sweet potatoes and cut them into chunks.

Step 2

Boil a pot of water and add the sweet potato chunks. Cook for about 15 minutes, or until tender.

Step 3

Drain the sweet potatoes and return them to the pot. Add the butter, salt, black pepper, garlic powder, and nutmeg.

Step 4

Mash the sweet potatoes until smooth and set aside to cool slightly.

Step 5

In a shallow dish, place the flour. In another dish, whisk together the eggs and water. In a third dish, place the almond meal.

Step 6

Once the sweet potato mixture is cool enough to handle, form it into small balls, about the size of golf balls.

Step 7

Roll each sweet potato ball first in flour, then dip into the egg mixture, and finally coat with the almond meal. Press the almond meal gently onto the croquettes to ensure it sticks.

Step 8

Heat the vegetable oil in a large skillet over medium heat until hot.

Step 9

Carefully add the croquettes to the pan, cooking in batches if necessary. Fry for about 3-4 minutes per side, or until golden brown and crisp.

Step 10

Remove the croquettes from the oil and drain on paper towels.

Step 11

Serve warm as an appetizer or a side dish.
