Ingredients

  • 4 pieces Chicken breasts
  • 1 cup Almonds
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup Breadcrumbs
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 large Eggs
  • 0.5 cup All-purpose flour
  • 0 Olive oil spray (or cooking spray)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil and lightly spray with olive oil or cooking spray.

Step 2

In a food processor, pulse the almonds until they are finely chopped, but not so fine that they turn into flour. You want a slightly coarse texture for added crunch.

Step 3

In a medium-sized bowl, combine the chopped almonds, Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and black pepper. Mix well to create the almond coating.

Step 4

In a small bowl, whisk the eggs until well beaten. Place the flour in a separate shallow dish.

Step 5

Pat the chicken breasts dry with a paper towel. Dredge each chicken breast in the flour, shaking off any excess. Then, dip the chicken into the beaten eggs, making sure it is fully coated.

Step 6

Press each chicken breast firmly into the almond coating mixture, ensuring the surface is completely covered. Place the chicken breasts on the prepared baking sheet.

Step 7

Lightly spray the tops of the chicken breasts with olive oil spray. This will help achieve a golden and crispy crust.

Step 8

Bake the chicken in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F (74°C) and the crust is golden brown. If the crust is browning too quickly, cover the chicken loosely with foil.

Step 9

Remove the chicken from the oven and let it rest for 5 minutes before serving. Serve warm with your favorite sides, such as roasted vegetables or a fresh green salad.
