Ingredients

  • 200 grams All-purpose flour
  • 50 grams Powdered sugar
  • 100 grams Unsalted butter (cold, cubed)
  • 50 grams Ground almonds
  • 1 large Egg yolk
  • 1 tablespoon Cold water
  • 3 large Eggs
  • 150 grams Granulated sugar
  • 2 medium Lemons (zested and juiced)
  • 1 large Oranges (zested and juiced)
  • 150 milliliters Heavy cream
  • 25 grams Almond flakes (optional, for garnish)
  • 1 tablespoon Powdered sugar (for dusting)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, powdered sugar, and ground almonds.

Add the cold, cubed butter to the dry ingredients and rub it in using your fingertips until the mixture resembles coarse crumbs.

Add the egg yolk and cold water to the mixture and stir until a dough begins to form.

Turn the dough out onto a lightly floured surface, shape into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
