Directions

Step 1

Wash the cucumbers, bell pepper, and onion thoroughly. Cut the cucumbers into quarters lengthwise, remove seeds, and finely dice. Dice the red bell pepper and yellow onion into similarly sized small pieces.

In a large bowl, combine the diced cucumbers, bell pepper, and onion. Sprinkle with salt, mix well, and let sit for 2 hours. This will help draw out excess moisture from the vegetables.
