Ingredients

  • 2 pounds ground beef (80/20 blend)
  • 1 medium yellow onion, finely grated
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 6 whole brioche burger buns
  • 6 slices sliced cheese (optional, e.g. cheddar or American)
  • 2 tablespoons butter
  • 6 whole lettuce leaves
  • 1 large sliced tomato
  • 0 to taste ketchup
  • 0 to taste mayonnaise

Directions

Step 1

In a large mixing bowl, combine the ground beef, grated onion, Worcestershire sauce, garlic powder, smoked paprika, salt, and black pepper. Mix gently with your hands until just combined—do not overwork the meat.

Step 2

Divide the meat mixture into six equal portions. Shape each portion into a patty about ¾ inch thick and slightly larger than the size of the burger buns. Use your thumb to press a slight indentation into the center of each patty to prevent doming while cooking.

Step 3

Preheat a grill or large skillet over medium-high heat. If using a skillet, add a drizzle of oil to prevent sticking.

Step 4

Cook the burger patties for about 4-5 minutes on the first side, then flip and cook for another 3-4 minutes on the second side or until your desired level of doneness is reached (internal temperature of 160°F for well-done). If adding cheese, place a slice on each patty during the last minute of cooking and cover to melt.

Step 5

While the burgers cook, toast the brioche buns. Spread butter on the cut sides and place them on the grill or skillet for 1-2 minutes until lightly golden.

Step 6

Assemble the burgers: Spread ketchup and/or mayonnaise on the bottom bun. Add a lettuce leaf, a slice of tomato, and the cooked patty. Top with the other half of the bun.

Step 7

Serve immediately with your favorite sides and watch them disappear!
