  • 3 pounds beef chuck roast

  • 0.5 cups red wine (optional)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves

Directions

Step 1

Season the beef chuck roast generously with salt and black pepper on all sides.

Heat a large skillet or Dutch oven over medium-high heat. Add olive oil and sear the roast for 3-4 minutes on each side until browned. Remove the roast and set aside.
