Ingredients

  • 1 pound dried navy beans
  • 6 slices bacon
  • 1 large yellow onion, diced
  • 0.5 cup molasses
  • 0.5 cup ketchup
  • 2 tablespoons Dijon mustard
  • 0.25 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic cloves, minced
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon salt
  • 3 cups water

Directions

Step 1

Rinse the dried navy beans thoroughly under cold water. Place them in a large pot and cover with water. Let them soak for at least 8 hours or overnight.

Drain and rinse the soaked beans. Set them aside.

Preheat your oven to 300°F (150°C).

In a large oven-safe Dutch oven or heavy-bottomed pot, cook the bacon over medium heat until crispy. Remove the bacon and place on a paper towel-lined plate. Reserve about 2 tablespoons of the bacon grease in the pot.

Add the diced onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
