Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves minced garlic
  • 2 cups heavy cream
  • 1.5 cups grated Parmesan cheese
  • 1 teaspoon dried parsley
  • 12 ounces cooked fettuccine pasta
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Season the chicken breasts with half the salt and pepper on both sides.

Step 2

In a large skillet over medium heat, heat the olive oil. Add the chicken breasts and cook for 6-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 4

Reduce the heat to low and pour in the heavy cream. Stir well to combine and let it warm up but not boil.

Step 5

Gradually add in the grated Parmesan cheese, stirring constantly, until the cheese has melted and the sauce is smooth. Sprinkle in the dried parsley, the remaining salt, and pepper.

Step 6

Return the cooked chicken to the skillet and spoon the sauce over the chicken. Let the chicken simmer in the sauce for 5 minutes to absorb the flavors.

Step 7

Add the cooked fettuccine pasta to the skillet and gently toss to coat it in the sauce.

Step 8

Serve hot, garnished with fresh parsley if desired.
