Ingredients

  • 400 grams Button mushrooms (or cremini mushrooms)
  • 6 pieces Garlic cloves
  • 4 tablespoons Extra virgin olive oil
  • 0.5 teaspoons Dried red chili flakes
  • 2 tablespoons Fresh parsley
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Freshly ground black pepper
  • 1 teaspoons Lemon juice
  • 1 loaf Baguette (optional, for serving)

Directions

Step 1

Clean the mushrooms by gently wiping them with a damp cloth or paper towel to remove dirt. Trim the stems if needed and slice them into halves or quarters, depending on their size.

Step 2

Peel the garlic cloves and slice them thinly.

Step 3

Finely chop the fresh parsley and set aside.

Step 4

In a large skillet or sauté pan, heat the extra virgin olive oil over medium heat.

Step 5

Add the sliced garlic to the pan and cook for 1-2 minutes, stirring frequently, until fragrant and lightly golden. Be careful not to burn the garlic.

Step 6

Add the dried red chili flakes to the pan and stir for about 30 seconds to infuse the oil with spice.

Step 7

Increase the heat to medium-high and add the mushrooms to the pan. Stir well to coat the mushrooms in the garlic-chili oil.

Step 8

Season the mushrooms with salt and freshly ground black pepper, then sauté for 6-8 minutes, stirring occasionally, until the mushrooms are tender and lightly browned.

Step 9

Remove the pan from heat and stir in the lemon juice and chopped parsley.

Step 10

Transfer the Ajillo Mushrooms to a serving dish and serve warm. Optionally, slice and toast the baguette, and use it to scoop up the garlicky, flavorful mushrooms.
