Ingredients

  • 2 whole Aji Amarillo or Serrano peppers
  • 1 cup Fresh cilantro leaves
  • 0.5 cup Fresh parsley leaves
  • 2 stalks Scallions (green parts only)
  • 2 cloves Garlic cloves
  • 2 tablespoons Lime juice
  • 1 tablespoon White vinegar
  • 3 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 2 tablespoons Water

Directions

Step 1

Wash and prepare the ingredients: remove stems from the peppers, cilantro, and parsley, and peel the garlic cloves.

If using Aji Amarillo peppers and you prefer a milder salsa, deseed them before blending (optional).

In a high-speed blender or food processor, combine the Aji Amarillo or Serrano peppers, cilantro leaves, parsley leaves, scallion greens, garlic cloves, lime juice, white vinegar, vegetable oil, salt, and water.
