Ingredients

  • 2 pieces Garlic cloves
  • 1 piece Egg yolk
  • 1 teaspoon Dijon mustard
  • 1 piece Lemon
  • 150 milliliters Extra virgin olive oil
  • 150 milliliters Sunflower oil or regular olive oil
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Freshly ground black pepper

Directions

Step 1

Peel the garlic cloves and finely grate them into a paste using a microplane or crush them with the flat side of a knife and a pinch of salt to form a smooth garlic paste.

Step 2

In a medium bowl, whisk together the egg yolk, Dijon mustard, and the grated garlic paste until well combined and slightly frothy.

Step 3

Squeeze the lemon and set aside 1 tablespoon of fresh juice. Add this to the garlic-egg mixture, whisking until it is thoroughly incorporated.

Step 4

In a measuring cup, combine the extra virgin olive oil and sunflower oil. Slowly drizzle the oils into the garlic-egg mixture, a few drops at a time, whisking constantly to emulsify the mixture. Take care to go slowly at first to ensure the aioli doesn’t split.

Step 5

As the mixture begins to thicken, you can gradually add the oils in a thin, steady stream, continuing to whisk vigorously until all the oil is incorporated and the aioli is creamy and smooth.

Step 6

Season the aioli with sea salt and freshly ground black pepper to taste. If needed, add a touch more lemon juice to balance the flavors.

Step 7

Transfer the aioli to a serving dish or airtight container and chill in the refrigerator until ready to use. Enjoy as a dip, spread, or sauce with your favorite dishes.
