This easy yet authentic recipe begins with cubes of firm tofu, lightly coated in cornstarch and fried to golden perfection. The tofu is then bathed in a savory dashi-based sauce infused with soy sauce, mirin, and the subtle umami of bonito flakes. Finished with fresh garnishes of grated daikon radish and thinly sliced green onions, this dish strikes a perfect balance of textures and flavors. Quick to prepare and deeply comforting, Agedashi Tofu is ideal for a light appetizer or a side dish that will transport your taste buds straight to Japan.
Drain the tofu and wrap it with a clean kitchen towel. Place a weight on top, such as a heavy plate, and let it sit for 10-15 minutes to remove excess water.
While the tofu is draining, prepare the sauce. In a small saucepan, combine the dashi stock, soy sauce, and mirin. Bring the mixture to a gentle simmer and add the bonito flakes. Remove from heat, allow to steep for a minute, then strain the sauce into a serving bowl, discarding the flakes.
Slice the drained tofu into cubes, approximately 1-inch each.
Heat the vegetable oil in a deep pan or pot over medium-high heat until it reaches 350°F (175°C).
Coat the tofu cubes evenly with cornstarch, shaking off any excess.
