Ingredients

  • 1 block Firm tofu
  • 0.5 cup Cornstarch
  • 2 cups Vegetable oil
  • 1.5 cups Dashi stock
  • 3 tablespoons Soy sauce
  • 2 tablespoons Mirin
  • 0.25 cup Bonito flakes
  • 2 stalks Green onions
  • 0.5 cup Grated daikon radish

Directions

Step 1

Drain the tofu and wrap it with a clean kitchen towel. Place a weight on top, such as a heavy plate, and let it sit for 10-15 minutes to remove excess water.

Step 2

While the tofu is draining, prepare the sauce. In a small saucepan, combine the dashi stock, soy sauce, and mirin. Bring the mixture to a gentle simmer and add the bonito flakes. Remove from heat, allow to steep for a minute, then strain the sauce into a serving bowl, discarding the flakes.

Slice the drained tofu into cubes, approximately 1-inch each.

Heat the vegetable oil in a deep pan or pot over medium-high heat until it reaches 350°F (175°C).

Coat the tofu cubes evenly with cornstarch, shaking off any excess.

Carefully fry the tofu cubes in the hot oil until they are golden brown and crispy on the outside, about 3-4 minutes per side. Remove from oil and drain on a wire rack or paper towel-lined plate.
