Ingredients

  • 6 pieces bone-in chicken thighs
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 14 ounces crushed tomatoes
  • 0.5 cup natural peanut butter (unsweetened, smooth or chunky)
  • 1 cup chicken broth
  • 0.5 cup coconut milk
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 0.25 teaspoon cayenne pepper
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 2 medium sweet potatoes, peeled and diced
  • 3 cups baby spinach leaves
  • 2 tablespoons fresh cilantro, chopped
  • 4 pieces lime wedges, for serving
  • 2 tablespoons vegetable oil

Directions

Step 1

Heat the vegetable oil in a skillet over medium-high heat. Sear the chicken thighs on both sides until browned, about 2-3 minutes per side. Remove and set aside.

Step 2

In the same skillet, sauté the diced onion until softened, about 3-4 minutes. Add the garlic and grated ginger, cooking for another minute until fragrant. Remove from heat.

Step 3

In a medium bowl, whisk together the crushed tomatoes, peanut butter, chicken broth, coconut milk, ground cumin, ground coriander, paprika, cayenne pepper, salt, and black pepper until smooth.
