Ingredients

  • 600 grams chicken thighs (boneless, skinless)
  • 60 ml olive oil
  • 60 ml lemon juice
  • 4 pieces red chili peppers (fresh)
  • 4 pieces garlic cloves
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1 tablespoon honey
  • 2 tablespoons parsley (fresh, chopped)
  • 8 pieces wooden or metal skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during cooking.

Step 2

Cut the chicken thighs into bite-sized pieces, about 1-inch cubes, and set aside in a large bowl.

Step 3

Prepare the Piri Piri marinade: In a blender or food processor, combine the olive oil, lemon juice, red chili peppers, garlic cloves, smoked paprika, ground cumin, ground coriander, salt, and honey. Blend until smooth.

Step 4

Pour the marinade over the chicken pieces and toss well to coat evenly. Cover and marinate the chicken in the refrigerator for at least 1 hour, preferably overnight for a stronger flavor.

Step 5

Preheat your grill or broiler to medium-high heat.

Step 6

Thread the marinated chicken pieces onto skewers, leaving a small gap between pieces to ensure even cooking.

Step 7

Grill or broil the kabobs for about 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice charred exterior. The internal temperature should reach 165°F (74°C).

Step 8

Transfer the cooked kabobs to a serving platter and sprinkle with freshly chopped parsley for garnish.

Step 9

Serve hot with a side of rice, salad, or flatbread for a complete meal. Enjoy!
