Ingredients

  • 3 medium sweet potatoes
  • 1 large onion
  • 3 garlic cloves
  • 1 tablespoon fresh ginger
  • 2 tablespoons olive oil
  • 1 14-ounce can canned diced tomatoes
  • 4 cups vegetable broth
  • 0.5 cup natural peanut butter
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 4 cups spinach
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh cilantro
  • 1 lime
  • 4 servings optional cooked rice or bread

Directions

Step 1

Peel and chop the sweet potatoes into bite-sized cubes. Dice the onion, mince the garlic, and grate the fresh ginger.

Step 2

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes until translucent.

Step 3

Stir in the minced garlic and grated ginger, cooking for another 1–2 minutes until fragrant.

Step 4

Add the ground cumin, coriander, and paprika. Stir well to coat the onion mixture in the spices.

Step 5

Add the diced sweet potatoes, canned tomatoes (with their juice), and vegetable broth. Bring to a boil, then reduce the heat to low and simmer for 15–20 minutes, or until the sweet potatoes are tender.

Step 6

Carefully stir in the peanut butter until fully dissolved into the stew. Season with salt and black pepper to taste.

Step 7

Add the spinach and cook for an additional 3–5 minutes until wilted.

Step 8

Turn off the heat and stir in the freshly chopped cilantro and a squeeze of lime juice for brightness.

Step 9

Serve hot, either on its own or with cooked rice or bread for dipping.
